Alright, now that we have gotten some savory dishes out of the way, lets get back to the desserts!! The other day when I got home from the the grocery store, I found three random vanilla pudding mix boxes in my collection of groceries. Needless to say, my two year old felt like throwing some miscellaneous items into my shopping cart, and I guys I was a little too distracted at the end of our shopping extravaganza to notice. I don’t know about you, but I’m always a little frazzled by the time we leave the grocery store. And since we don’t eat all that much pudding, I wanted to come up with a yummy recipe that I could incorporate this in as an ingredient. I’m actually really pleased with how these turned out! They are melt in your mouth good! Try them and give me a shout back if you like them 🙂

 

Ingredients

  • 1 cup softened butter, (2 sticks)
  • 1/2 cup packed brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon vegetable oil
  • 1 3 ounce package Vanilla Cook & Serve Pudding mix, (do not cook! you’ll just need the powder)
  • 2 1/2 cups all purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup chopped walnuts
  • 1 cup white morsels, (if you don’t like white chocolate, substitute for milk chocolate chips)
Directions
Preheat your oven to 350 degrees. Combine butter and sugars in a large mixing bowl until light and fluffy. Then add in your eggs, vanilla extract, and vegetable oil. After mixing all wet ingredients together, add your vanilla pudding mix.
Turn your mixer on high and mix until pudding mix is light and fluffy like this. In a separate bowl sift together flour, salt, baking powder, and baking soda. Then add to the pudding mixture and mix well.
Fold in nuts and white morsels.
Use your cookies scoop and spoon dough about 1 inch apart on a cookie sheet.

Bake at 350 degrees for 11 to 12 minutes or until the bottoms start to turn a light golden brown. Hope you enjoy 🙂
